做法較爲複雜獨特，先將(jiāng)泥鳅放養于清水中數日，待其肚中泥沙吐盡，再取豬油若幹，雞蛋數個，乘泥鳅饑餓之時投入讓其將(jiāng)豬油雞蛋吃完，再取嫩豆腐數塊，將(jiāng)泥鳅拌清水置入鍋内加蓋，慢慢加熱。泥鳅鑽入豆腐内死去，逐旺火讓泥鳅肚内的豬油冒出來，再拌紫蘇葉等佐料上火鍋，其味妙不可言；（口味清淡）
